Antioxidant Activity of Sulfate Metabolites of Chlorogenic Acid

This study aimed to determine the antioxidant properties of sulfate monoesters ferulic, caffeic, dihydroferulic and dihydrocaffeic acids, main metabolites chlorogenic acids. These compounds are not commercially available, so they were synthesized in laboratory. The LC-MS/MS analysis allowed for full characterization these derivatives, which has made them reliable standards further research. Purified including ferulic acid-4-O-sulfate, caffeic acid-4-O-sulfate acid-3-O-sulfate, acid-3-O-sulfate examined their capacities compared precursor using Folin–Ciocalteu, CUPRAC (cupric ion—reducing) DPPH• (2,2-diphenyl-1-picrylhydrazyl) methods. shows that hydrogenation acids into a positive influence on reducing properties. Moreover, all exhibited very weak compounds. presented results show transformation phenolic via sulfation leads inhibition due blockage hydroxyl groups.
